COPYCAT RECIPE: Creme filled chocolate sandwich cookies

Sandwich Cookies - Chocolate - Makes 15 sandwich cookies
COOKIE
1 ½ cups all purpose flour
¾ cup cocoa powder
¾ cup sugar
½ teaspoon salt
¼ teaspoon baking powder
14 tablespoons unsalted butter, at room temperature
3 tablespoons whole milk
1 teaspoon vanilla extract
FILLING
1 stick unsalted butter, at room temperature
1 ½ cups powdered sugar
¼ teaspoon salt
1 tablespoon vanilla extract
Add the flour, cocoa powder, sugar, salt, and baking soda to a bowl and whisk to combine. Add butter beat with a hand mixer. Add milk and vanilla. Beat with a hand mixer to combine.
Lay batter onto a large piece of wax paper. Divide in to 2 pieces. Press each piece of batter into a log about 2 inches in diameter. Wrap tightly with plastic wrap. Place in the fridge for about 1 hour.
Preheat oven to 350°F. Line baking sheet with parchment paper. Pinch off small pieces of dough, and press them flat (no bigger than a quarter - they will expand) on the cookie sheet, about 1” apart from each other. Bake for 12-15 minutes. Transfer to a wire rack and then cool.
To make the filling, whisk or beat butter, powdered sugar, salt, and vanilla in a mixing bowl until smooth and creamy.
Put a dollop on the bottom of one cookie. Top with a second cookie and smush to fill. Repeat. Enjoy.
