COPYCAT RECIPE: Creme filled chocolate sandwich cookies

Sandwich Cookies - Chocolate - Makes 15 sandwich cookies

COOKIE

    • 1 ½ cups all purpose flour

    • ¾ cup cocoa powder

    • ¾ cup sugar

    • ½ teaspoon salt

    • ¼ teaspoon baking powder

    • 14 tablespoons unsalted butter, at room temperature

    • 3 tablespoons whole milk

    • 1 teaspoon vanilla extract

FILLING

  • 1 stick unsalted butter, at room temperature

  • 1 ½ cups powdered sugar

  • ¼ teaspoon salt

  • 1 tablespoon vanilla extract


  1. Add the flour, cocoa powder, sugar, salt, and baking soda to a bowl and whisk to combine. Add butter beat with a hand mixer. Add milk and vanilla. Beat with a hand mixer to combine.

  2. Lay batter onto a large piece of wax paper. Divide in to 2 pieces. Press each piece of batter into a log about 2 inches in diameter. Wrap tightly with plastic wrap. Place in the fridge for about 1 hour.

  3. Preheat oven to 350°F. Line baking sheet with parchment paper. Pinch off small pieces of dough, and press them flat (no bigger than a quarter - they will expand) on the cookie sheet, about 1” apart from each other. Bake for 12-15 minutes. Transfer to a wire rack and then cool.

  4. To make the filling, whisk or beat butter, powdered sugar, salt, and vanilla in a mixing bowl until smooth and creamy.

  5. Put a dollop on the bottom of one cookie. Top with a second cookie and smush to fill. Repeat. Enjoy.
