CHOCOLATE COVERED CHERRY COOKIES
1 ½ flour
½ cup cocoa powder
¼ teaspoon salt
¼ teaspoon baking powder
¼ teaspoon baking soda
½ cup butter (1 stick), softened
1 cup sugar
1 egg
1 ½ teaspoon vanilla
1 10 oz jar maraschino cherries, about 48
6 oz chocolate chips
½ cup sweetened condensed milk
Preheat oven to 350°F.
Drain maraschino cherries, reserving juice.
In a large bowl stir together flour, cocoa powder, salt, baking powder, and baking soda.
In a large bowl beat together butter and sugar until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well combined.
Shape dough into 1-inch balls; place on an ungreased cookie sheet. Press down the center of the dough with your thumb.
Place a cherry in the center of each cookie.
In a small saucepan, combine chocolate chips and sweetened condensed milk; heat until chocolate is melted and whisk to combine. Stir in 4 teaspoons of cherry juice. Spoon 1 teaspoon of frosting over each cherry, spreading to cover the cherry.
Bake for 10 minutes. Cool on a wire rack. Makes about 48 cookies.
