Recipe: Chocolate Covered Cherry Cookies

My mom made these delicious chocolate cookies only during the holidays, which made them all the more special. With a rich chocolate cookie, topped with a maraschino cherry, and slathered in chocolate frosting, what could be better?

CHOCOLATE COVERED CHERRY COOKIES

  • 1 ½ flour

  • ½ cup cocoa powder

  • ¼ teaspoon salt

  • ¼ teaspoon baking powder

  • ¼ teaspoon baking soda

  • ½ cup butter (1 stick), softened

  • 1 cup sugar

  • 1 egg

  • 1 ½ teaspoon vanilla

  • 1 10 oz jar maraschino cherries, about 48

  • 6 oz chocolate chips

  • ½ cup sweetened condensed milk

  • Preheat oven to 350°F.

  • Drain maraschino cherries, reserving juice.

  • In a large bowl stir together flour, cocoa powder, salt, baking powder, and baking soda.

  • In a large bowl beat together butter and sugar until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well combined.

  • Shape dough into 1-inch balls; place on an ungreased cookie sheet. Press down the center of the dough with your thumb. 

  • Place a cherry in the center of each cookie.

  • In a small saucepan, combine chocolate chips and sweetened condensed milk; heat until chocolate is melted and whisk to combine. Stir in 4 teaspoons of cherry juice. Spoon 1 teaspoon of frosting over each cherry, spreading to cover the cherry. 

  • Bake for 10 minutes. Cool on a wire rack. Makes about 48 cookies.
