Recipe: Popovers

Kids are always amazed by the transformation that occurs when a seemingly boring batter goes into the oven and comes out looking, smelling, and tasting amazing! Popovers take the fun up a notch because they really POP! And, for the science geeks out there, this occurs without any of the common leavening ingredients like baking soda, baking powder, or yeast.

Before you get started, give your oven window a quick wipe so that the kids can watch these popovers rise in the oven! Whatever you do, resist the urge to open the oven during baking, or they will deflate!

POPOVERS

  • 1 cup all-purpose flour

  • 1/2 teaspoon salt

  • 2 large eggs, at room temperature

  • 1 + 1/4 cup milk, at room temperature

  • 1 tablespoon warm melted unsalted butter

  • Preheat the oven to 450°F. If you don’t have a popover pan, use a muffin tin. Lightly spray the sides.

  • Whisk together flour and salt in a large bowl. Whisk together eggs, milk, and butter in another bowl. Pour the egg mixture over the flour mixture and fold until just blended. A few small lumps may remain.

  • Fill cups 2/3 full. Fill any unfilled cups 1/3 full with water. Bake for 15 minutes at 450°F, then reduce oven temperature to 350°F and bake for 20 minutes more, until well browned and crusty. Do not open the oven to check.

  • Remove from oven, and quickly puncture sides with a sharp knife to let steam escape. This is an important step as it will keep your popovers from deflating as they cool!
